 APPLE CINNAMON CAKE


INGREDIENTS

2-EGGS
1- CUP VEGETABLE OIL
1 1/2- CUPS SUGAR
3-TSP. GROUND CINNAMON
1/2- TSP SALT
1TSP- VANILLA EXTRACT
2 1/2- CUPS ALL PURPOSE  FLOUR
1-TSP BAKING SODA
4-CUPS APPLES ( PEELED, CORED ,& DICED)


1. PREHEAT OVEN TO 350 F; GREASE AND FLOUR ONE 9" X 13" CAKE PAN.

2.IN MIXING BOWL; BEAT OIL AND EGGS WITH ELECTRIC  MIXER UNTIL
CREAMY. ADD SUGAR AND VANILLA AND MIX WELL.


3. COMBINE DRY INGREDIENTS IN BOWL, SLOWLY ADD TO EGG MIXTURE UNTIL
WELL COMBINED. NOTE THAT THE BATTER WILL BE VERY THICK. FOLD IN THE
APPLES BY HAND USING A WOODEN SPOON. SPREAD BATTER EVENLY INTO PREPARED PAN.

4. BAKE @ 350F FOR 45 MIN, OR UNTIL CAKE TESTS DONE. LET CAKE COMPLETELY COOL ON WIRE RACK.
ONCE COOL, SPRINKLE TOP WITH POWDERED SUGAR.
